What do you do when wormwood starts to take over your garden? Make absinthe of course. Anise, basil and fennel give this drink its distinctive liquorice flavour. The wormwood bitterness is tempered with a small amount of sugar making this a liqueur version of absinthe. Absinthe is coloured green by infusing the product with mints, however it will go brown. If you have had absinthe that did not go brown then it was coloured by artificial colouring.
